Sweet, salty, ridiculously refreshing, and served straight from the rind and here's how to make it.

Ingredients: 

  • 1 watermelon, halved and frozen 

  • 1 cup heavy cream (or full-fat coconut cream) 

  • 1/2 ZeroLyte Salty Watermelon pack 

Instructions: 

  1. Cut the watermelon in half. Use a spoon to scoop out a bowl-like hollow in the center of one half, leaving about an inch of flesh around the edges. 

  1. Wrap the hollowed half tightly in plastic wrap and freeze until completely solid, about 8 hours or overnight. 

  1. Remove the plastic wrap. If the melon is rock hard, let it sit out for a few minutes until it's just soft enough to scrape. 

  1. Whisk the ZeroLyte packet into the cold cream until dissolved. 

  1. Pour a little of the cream mixture into the hollowed center. Using a sturdy spoon or fork, scrape the frozen watermelon in long strokes, mixing it with the cream as you go. 

  1. Keep adding cream a little at a time and scraping until the mixture turns fluffy and resembles soft-serve. 

  1. Drizzle with honey. Serve immediately, straight from the rind.
